A simple recipe for vegetable or corned beef stew.
Ingredients:
Peel potatoes and cut into large chunks. Put into saucepan and add stock, salt, pepper, mustard, garlic & tomato purée. Cover with about 0.6l of boiling water, put on heat and simmer for about 20mins.
Slice carrots into pieces about 1cm thick and add to pan, if necessary top up with boiling water continue to simmer for 5mins. Chop onions and add (along with butter beans if desired), continue to simmer for a further 5 mins. Vegetables should be tender befoe serving.
If adding corned beef, cut into 2.5cm chunks and add 10 mins before end of cooking time.
